Food Pairings
This intensely aromatic wine is excellent enjoyed with shellfish and all fish and vegetable dishes (appetizers, first and second courses). In addition, it also goes perfectly with white meats, egg dishes and many cold cuts.
Ideal serving temperature

Decantation is natural, at a low temperature to aid the separation of the gross lees. The super-ripe grapes undergo their fermentation start-up on the skins in steel tanks and are left to macerate for a week at 8°C. The free run juice is then transferred into fermentation vats where it rests on the lees for approx. 5 months. One month before bottling, the two cuvees are blended together.
