In the glass

The name Shymer combines the words Shyraz (Syrah) and Merlot. Also, it echoes the French word for Chimera, the fantastical creature of Greek mythology, the symbol of seemingly impossible dreams and wishes, such as the Marzotto family’s desire to create a wine such as this. Floral notes and aromas of red berries, followed by a barrique woodiness and toasty hints of bacon, coffee and lastly, a spicy finish of cinnamon, vanilla and nutmeg.

Vinification

Grapes are sorted by hand before they are destemmed and lightly pressed. Early natural fermentation of the grapes using their own yeasts, maceration with the aid of marc presses and delestage fermentation in order to preserve the variety’s primary character.

Ageing

12 months in new or second/third fill French oak barriques, depending on vintage. In bottle for a further 24 months.

Technical Notes

Dry, warm and soft, with good freshness of taste, quite tasty and with a silky and enveloping tannin. Full bodied, balanced, intense, persistent with an excellent quality.
