After the grapes are quality-selected and picked, the berries are gently pressed and the must ferments at a low temperature for 2 months; one lot of wine then matures sur lie in steel for 1 year, while the rest of the wine rests in oak barrels the same period of time. After botting, the wine ages for 2 years.
